Ustilago maydis is a well studied member of the genus Ustilago and is widely known in Mexico as huitlacoche. It has an important place in mycological history because of its distinctive dark gall structures and its role as a model organism in studies of fungal biology and host interactions. The name Ustilago comes from Latin ustilago, referring to a smut or burnt appearance, while maydis refers to Zea mays. Its distinctive coloration, unusual biology, and extensive history in scientific literature make U. maydis an especially recognizable member of the Ustilaginaceae.
